ISO on-the-go gluten and dairy free breakfast ideas!

Last school year, I found that I ended up feeding ds (now 3.5) in the car on the way to drop his sister at school. A couple times a week, we'd go straight home and have a bigger breakfast, but there were days when he only had a couple granola bars for breakfast, followed by a cheese stick.

Since May, we've been gluten free and for the last two weeks, we've been dairy free. His gut is finally normal without this stuff in his diet but I'm completely lost on what to do for breakfast! We were doing scrambled (w/o milk) or fried eggs but he's not liking those right now and honestly, the smell of eggs makes me green.

So any ideas?

I find that gluten-free pancakes are pretty portable. YOu can do them dairy-free, and you can also put a host of other things in them:

zuchinni
greens
molasses
pumpkin
yellow squash
banana
apple
buckwheat
teff flour

I start with Bob's Red Mill mix. I use coconut milk and flax seed as egg replacer (but that's not an issue for you). I make a double batch and make them "fresh" each morning. A double batch lasts 2-3 days with both DS and me eating it.

Rice Chex (DD2 puts almond milk on hers), buckwheat waffles/pancakes (I make a chocolate version every once in a while as a treat), breakfast focaccia (cinnamon sugar on top), roasted potatoes, curred chickpeas (my DS likes it for breakfast, lunch, and dinner). Hash (any leftover meat and potatoes fried up).

Egg muffins and egg custards can both be made ahead and eaten cold. I usually put chopped meat and/or veg in the muffins, and fruit in the custard. You do need a spoon for the custard, don't know if that's a problem for your lo.

I've been making GF muffins (I've subbed almond milk and they still tasted good) and warm them up with peanut butter in top for breakfast. Maybe try different variations to see what he likes - my kids like banana, pumpkin, and zuccini muffins.

Oh, Albertsons sells GF frozen waffles that are decent tasting.

Rice pudding made with coconut milk.

Fruit salad with seeds (or dairy-free yogurt or granola)

Egg muffins/mini fritatta are really easy - and you can freeze them for later - add in whatever veggies are liked best.
