What`s cooking in August, Veg*ns???

I didn't see a new thread, so I'm starting one.

Tonight is the rice and chickpea salad from The Vegetarian Mother's Cookbook, crackers with goat yogurt cheese and white bean/rosemary dip, and some kind of salad. I'm thinking fattoush sounds T-A-S-T-Y.

yeah a new thread!!! thanks. tonight was a night that we had to hurry and eat so we ate the morningstar "chicken nuggets" the kids had them with sweet potatoe fries I had mine with carrot sticks, (yep I am trying to loose weight)

Yesterday I made a big pot of lentil soup for lunch and to freeze leftovers. (Although I think baby is coming really soon, so I may not freeze it afterall & just keep it in the friddge ) I forget how simple and delicious lentil soup is. For dinner we had big salads and watermelon.

Tonight will probably be some kind of rice, broccoli, Quorn and cheddar skillet. In other words I am throwing a bunch of stuff together & hoping it works

Ooh, impending baby! How exciting!

Tonight I think I'll send DH out with a big, ol' plate of stuff to grill. We have some leftover grilled carrots and potatoes to heat up, and I want the zucchini that came in our CSA share on there. Maybe some yams, too? I wonder if chickpea cutlets would be okay on the grill if I brush them with oil first?

And a salad with all of our beautiful lettuce, and a spicy vinaigrette.

New here- new to vegan too- less than a year.
After making roasted/grilled veggie sandwiches, added black beans and made enchiladas with guac. Love when avocados are on sale!

breakfast-banana
egg potato cheese burrito and croissant at the farmers market

snack- homemade lara bars, peaches, 3 grain granola bars (homemade), veggie straws

lunch- grilled chard zuke and mushroom pizza from last night

dinner- salad with farm/ home fresh peas carrots cucumbers peppers tomatoes, eggs. homemade herb bread croutons

dessert- homemade pineapple coconut frozen yogurt

Dinners for the week
quinoa salad
eggplant parm
stuffed potato with broccoli etc
black bean and corm taco with tomato rice
avo and cucumber sushi
also on the list
spelt crackers
lemon squares

Dinner tonight was a big mashup of stuff

My aunt brought me a zuke from her garden so I made zuke pancakes. Had a bit of better then sour cream so I added cukes, garlic, chives, basil and made a dipping sauce.
We had a black bean salsa w tomatoes, basil, cilantro, peas from the garden, onion frm the farmers market w chips
Sauteed garden green beans w onion garlic and tomato w w.wine
And corn on the cob

YUMMMY meal. Lots of "salsa" left over for dh and I to take to work

Thelentil soup sounds like a good idea since dh and I wont be around for dinners this week.Dc can take it to nanas and we can take it to work

Tried a new soup from Neal Barnard's new cookbook. I really like the cookbook because it offers a three day menu plan, four dinner party menus, a shopping list, and each recipe has the nutritional info breakdown!

Other than that, we're eating our usuals: oatmeal, beans and rice, fresh green salads, tons of fresh fruit and steamed veggies.

Dh and I are both at work now<sigh> and dc are with their grandparents. I have red lentil coconut soup in the slow cooker for when dh and I get home. And then well take the leftovers with us to work tom. and dc will have it tom. for lunch

subbing. i've been traveling, staying with family, and not the one in charge of dinners lately. i think tonight will be black bean tacos, something simple.

tonight is going to be salad. our ac is broken during the biggest heat wave in a loooong time. So no heating up the house right now. I also think it will be salad or veggie subs for awhile. oh well.

Bumping with tonight's dinner.

We got vegan perogies at (of all unlikely places) the Italian grocery store. So, we'll have those with a caramelized onion and bean salad with pine nuts, and a kale salad.

yum! my belly just growled.

yesterday i made red lentil soup, Cairo-style (according to my recipe anyhow). served with garlic naan from the bakery (toaster-freshened). more of the same tonight. it was super.

Tonight we had the apple/sage field roast sausages with roasted vegetables and a green salad. Even my meat eating husband loves those sausages.

We had sesame ginger noodles with broccoli and teriyaki tofu. So yummy and fast!

Thank goodness tomorrow we are going to a birthday party (host is veg*n) then Sunday MIL is cooking. I get atleast 2 days to not have to worry about dinner.

tonight I had a bean burrito and cut fruit. The boys had cheese pizza they dont like beans that much. That is unless I cover them up with other stuff.

fried chik'n seitan was our main course, from "Vegan Comfort Foods".
We just started making our own seitan with this recipe-had no idea how stupidly easy it is, and my Gods, sooooooo delicious....

I had salad a dirty salad with lettuce, peppers, cucumbers, shredded , , and bean sprouts with sundried tomatoe vinegrette and of course tomatoes. Loved it and the kids ate it of course they had ranch and thousand Island a croutons but they ate it. Yeah anything with dirty in it must be good huh heheh.

We had pasta with vegan alfredo sauce, broccoli and mushrooms YUM!
