Veggie recipes that your kids love?

I need some new inspiration, and this is the perfect time to try new veggies since the farmers market is overflowing with options. I'd love to hear about the veggies and recipes that are hits with your families. I need to shake things up a bit around here!

Veggies with cheese sauce (we normally make it with cauliflower and carrots):

Sauce:
Two cups shredded good cheddar cheese (we use kerrygold)
One cup of heavy whipping cream
tablespoon mustard (the grainy stuff is good)
garlic or garlicpowder to taste

Mix all ingrediants on low heat until cheese melts into cream and you have a smooth sauce. Add more cream if you need to. Pour over steamed veggies (and pasta shapes if you like).

Eat and eat until you feel ill...'cause its that good.

Ahh yes. Cheese sauce. Forgot to mention that we are dairy free (and nut free!) due to allergies. Sounds delicious though!! Maybe someday... I keep dreaming of that day. I'm going to gain 50 lbs when DS weans (again, someday.) with all of the cheese I plan on eating.

We've been doing breaded, oven-baked zucchini and eggplant. I slice it into thin slices, coat with egg and doctored-up bread crumbs (add garlic, italian seasoning, pepper) and bake on a pizza stone at 375 until desired doneness. (How's that for technical?!) I made eggplant parmesan (you could omit the cheese if you have a tasty sauce) last night. DH and kids loved it even though they swore they all hated eggplant.

My kids love beets, boiled until they are tender, then with butter and salt. They say they taste like corn.

Now I know what I'm doing with the zucchini in my fridge! Sounds yummy!

One of my children likes gravy, so I make tomato gravy (over rice). It's just gravy, with a ton of fresh tomatoes added. Flavor it with a bit of worchestershire sauce, maybe some bacon grease. YUm.

Of course, they love fried okra this time of year, but I don't think that is really healthy. LOL

My dds love it when I steam green beans and mix that up with chopped up fried onion, and crumbled up bacon pieces. They eat most veggies raw with my homemade honey mustard dressing (1 TBS honey, 1TBS mustard, 1 TBS mayonaise, 1 tsp lemon juice).

My kids love stuffed squash. It was requested for supper when I found another base ball bat sized one in the garden (how do I keep missing them?). So Cuban stuffed squash it'll be!

They also love zucchini pancakes. I made a batch last night for an appetizer (emergency livestock work had to be done because of the extreme heat so supper would be LATE), and they were devoured in no-time.

Home made pizzas loaded w/veggies (especially if I caramelize the veggies first, or grill them). Really, just sauce and caramelized veggies rock, who needs cheese?

Sauteed veggies and bits of meat or some beans in a tortilla.

Roasted red pepper hummus.

Pretty much any combination of oven-roasted veggies go over well, esp. w/rosemary and garlic.

Pretty much any salad gets devoured.

Oh, and sautee some bacon and render out that good grease. Remove bacon and cook a chopped onion and several minced cloves of garlic in that grease. Add loads of sliced mushrooms, okra cut into pieces (or whole, either way), and chopped tomatoes (can use canned). Salt and pepper. There you have an awesome dish to serve w/beans around the campfire. MMMMMM.

My kids really do love veggies.

My toddler will eat buckets of vegetable soup. (I'm vegan and mostly grain free, too, so that's the best way I've found to get her to eat veggies).

We like vegetable soups that are thick and creamy, but still have chunks. So I cook up onions and whatever vegetables look good in some vegetable broth and rice milk, then puree half of it, and add spices. Now that it's so hot, I usually cook a big pot on Sundays and then we eat the leftovers straight out of the fridge all week.

pan fried zucchini coins in garlic and soy sauce is a favorite around here

carrots with chardonnay, butter, and dill

grated beets and kohlrabi (I don't put anything on it)

green beans are also good with garlic and soy sauce

or green bean casserole (but need to remember green beans are still beans.

My dc love

zuke pancakes like pp mentioned
zuke "fries" search recipes they are scliced into fry shape breaded and served w marinara(I use canned tomato sauce as dipping sauce)
sweet potato fries
broccoli raw or steamed lightly
green beans cooked with tomatoes and white wine


I find that my dc will eat pretty much any veg raw as long as they've got hummus to dip it in to
