Does anyone know whether one can can tomato sauce using just a pressure cooker?

You can do it in a water bath canner if you properly acidify it.

I don't really want to add citric acid...hum. I kind of thought that with tomatoes I could get away with pressure cooking since they can be canned with just boiling water. All the sites that say you can't seem to be selling pressure canners. Makes me suspicious. :-)

Is there anything in it other than tomatoes? Things change if you are canning sauce with low acid veggies (onions, garlic etc)

Why no citric acid? How do you feel about lemon juice? You can use that.

Here's some info.
