My first TF experiment

I am new to this forum, and new to TF. I borrowed a friend's Nourishing Traditions, and I made the cream cheese and whey recipe. That turned out great - but my real experiment was the salsa recipe. I used the whey I got from the cream cheese and whey recipe, and I have left the jars out on the counter for 48 hours now. It looks fine. I just thought it would expand more because of the instructions to make sure I leave an inch of room when I fill the jar for the expansion. Has anyone made this? Should it be expanding more? Should I leave it out on the counter another day? I am guessing it is fine - just looking for a little wisdom from the more experienced TF-ers out there.

I have made the salsa from NT and I don't remember mine expanding. It sounds normal to me!

Thanks! I just assumed it was fine and I put it in the fridge. DH and I sampled it yesterday. It is really good! My first TF experiment was a success. Hmmmm...What do I want to try next?
