GF sandwich bread recipe?

I wasn't sure where to post this, but I need some recommendations for a good, easy, tried and true recipe for gf sandwich bread. My dd has been gf for some health issues and really *really* misses bread. She's going with dh to my MILs for the weekend so I have some time to mess around in the kitchen and I'd love to surprise her when she gets home with some fresh bread

I don't have an easy one but I use this website and the gluten free vegan hemp bread is really good.

i use the bob's red mill gluten free homemade bread mix. i use a bread machine to make it. i used to make it by hand and it turns out just as good either way. make sure to let it rise twice if you do it in the machine, otherwise it will turn out flat and lumpy.

i use coconut milk instead of cow's milk, or i use rice milk if it's all i have, 3 whole eggs (it calls for 1 whole egg and enough egg whites for a half cup), olive oil, and Bragg's apple cider vinegar. i also add in 3 tbs of ground flax seed and 3 tbs of unsweetened finely shredded coconut, and i whisk in some pumpkin puree or baby food squash or sweet potatoes with the wet ingredients. i add all this stuff for both taste and nutrition.

i've been making this for years and my 7yo says it's "his best bread ever".
