Bison, what to do with it?

I got some Bison out this morning. Now what? Burgers? This will be the first time I have prepared it.

I'd just treat it like beef, and expect a slightly stronger flavor. (Thats what I do with venison anymore - I just use it in place of beef in any recipe I like

I'd handle it like I'd handle beef. I don't find it stronger, it's difficult to describe, but it just tastes cleaner than beef, or more like grass fed beef.

We cook it on the grill as burgers or use it in chili.

I agree, just use it like you would beef in any recipe.

I think the flavor is a bit stronger than beef, but different.

spaghetti with meat sauce or meatballs
tacos
chilli
rice and ground meat with eggplant (from Real Cajun cookbook)

I found that once I started using Bison in lieu of Beef, I couldn't go back. Beef leaves such a fatty taste/feel in my mouth while Bison, like PP said, tastes more grass-fed, cleaner.

My dad will only make meatloaf out of bison. It's really good.

(Just to clarify, he'll use bison for other meals but won't make meatloaf out of any other meat.)

I like bison, but personally I find it too dry for burgers or meatloaf on its own. I usually add in some fats so it's not dry (I have home rendered tallow a friend makes, or I put in some butter or bacon grease). But yeah, just treat it like beef!

I use it in meatloaf, chili, stew or anything really. How is it cut? is it ground?

I just made burgers out of them. I added a little sea salt and chopped up jalapeno. They were very good.

The meat was ground.
