On a whim, I picked up a box of Celestial Seasonings "cool brew" iced tea at the health food store today. It just has normal tea ingredients listed on the box. It's a tea bag that infuses in cold water in 5-10 minutes. I drank a couple glasses of it and it tastes fine, but then I got to wondering how the heck it works. I mean, if you put a regular tea bag in cold water it takes it like 24 hours to infuse properly.

The only information I can find about how this works is a patent that was taken out for "cold brew tea." http://www.patentstorm.us/patents/64...scription.html It's very technical and I can't wrap my brain around it enough to figure out if I should drink any more of this stuff or not. Is anyone able to translate this into layman's terms? Am I drinking poison?
