Eggplant? What to do? - Page 2

A silly queston here...do you need to peel the eggplant first? I never used eggplant before, but I have several growing in the garden....

Three ways we like it:

slice thickly with the skin, salt, olive oil, and grill it. Make sure it is well done. Throw it into a bowl and cover it with saran wrap. This makes it tender. We love it with a little ponzu sauce, if you have it. We also like this chopped up with zuccini prepped the same way. Toddler and baby both like it.

eggplant is a great pairing with shitake mushrooms, peel and salt the eggplant, wait 20m and squeeze well, saute in gobs of olive oil and then add some sliced shitake mushrooms and some sliced garlic, finished with parsley - this is great with pasta, also good with a little lemon juice and cheese on toast

I love bagan bartha too. We have a trader joes nearby and they have great curried chickpeas that add more cooked chickpeas too. Favorite veg dinner.

No, you don't need to peel, although sometimes I prefer to peel in 1-inch strips around the eggplant if I'm going to slice in discs, especially with larger ones.

I only peel them if they get really huge before picking, but usually not.
