For those with gluten intolerance...how long until you react????

I've been suffering from horrid panic attacks for over a year. Daily, sometimes 6 times a day. About two weeks ago I cut out gluten and within 24 hours I had ZERO panic attacks. None at all, no signs of an impending panic attack. Today, due to really crappy meal planning I ended up eating toast that was whole wheat bread. About two hours later, I had a massive panic attack. I'm wondering if it's from the gluten, even if it was within a couple hours of consumption???

I felt better a day and a half after I cut out gluten, and early on when I got glutened, the next day I felt like I'd been run over by a train. I'm not sure if it mattered what time of day I got my gluten--over time, my reactions have gotten less and less. But my son has reacted faster to some foods (not IgE reactions), and I think a couple hours is within the realm of typical.

Well I confirmed my suspicions. Went to bed with a sore stomach last night, and woke up with about 5 or 6 spots in my mouth that are going to erupt into canker sores. Blah.

Dunno 'cause I'm too scared to try gluten (EVER again).
At least now you don't have any questions about it.
