I have a lot of these and would love to hear your ideas on what to do with them.

So far we have prepared them in the following ways:
-soup
-quesadillas
-fajitas
-portaburgers
-salads
-homemade pizza topping

Any other ideas?

Stroganoff, buckwheat casserole

stuff them with bread crumbs, cheese, veggies and grill them. that's my favorite way to eat them besides straight up grilled.

I can't remember the exact recipe now, but we like them something along the lines of sliced, sauteed in some olive oil, then add balsamic vinegar, some fresh basil and other herbs as desired....that's nice as a side dish.

stuffed mushrooms are delicious. i make mine with the chopped up stems and maybe one whole mushroom chopped fine, crabmeat (or you can use the fake crab legs), finely minced garlic, and a bit of peccorino romano cheese (or you can use any strongly flavoured hard cheese like parmesan). stir it all up together and spread it over the mushroom caps. you can grill, bake (350F for about 20 min), or broil them.

or slice them up and stir fry with onions and garlic in butter or olive oil and serve over baked or mashed potatoes.

We make them into noodles and top them with bacon carbonara sauce for a treat!

We've also stuffed them with a mixture of cream cheese, spicy italian sausage and sliced bell peppers and baked them. Yum!
