I put about a cup and a half of oatmeal in a magic bullet (blender) with 2 eggs and some kind of liquid - sometimes I use cottage cheese, ricotta cheese, yogurt, heavy cream, leftover whey from draining yogurt etc.... blend and then make as you would pancakes.
For variety, sometimes I'll mix in a few dark chocolate chips and walnuts, or blueberries or maybe a few chunks of banana. The possibilities are endless....
My kids love them.
