how to replace eggs in my cookie recipe and other new veg ?s

I stopped eating mammals a few months ago after watching Earthlings (http://video.google.com/videoplay?do...2964130308142# ). I stopped eating chicken breast last month. I was content to go on eating eggs from what I thought of as well cared for hens (free range), but then I read more... http://www.vegansociety.com/resource...-and-eggs.aspx

I am thinking I will still get eggs at the local farmers market and may still use them if it is not a commercial venture to the farmer most of what is in the above article will not be true for those chickens. DD1's father is against me removing all forms of animal protein from her diet, but very supportive of the changes I am making in general (now).

I read about the B12 thing here too http://www.vegansociety.com/lifestyl...ition/b12.aspx which confused me. If a vegan diet leaves out a nutrient that we need, then it is not the answer. It may be that we also used to have the bacteria in our gut that excreted B12 like the other mammals they mention. It may also be that we ate meat when we came upon already dead animals often enough to supply us with B12. And, when salmon spawn and die, I feel sure our ancestors picked them up and ate them. Anyway, I read that clams are very high in B12 and not a mercury problem with them, so I may try some seafood along with my fruits and veggies (I am GFCFSF already)

So I have this really great cookie recipe that I make. The only liquid in it is egg and oil. They are peanut butter chocolate chip cookies. Okay here is the recipe....
Preheat oven to 330. Mix in order listed. bake for 10.5-12 min depending on how chewy you want them. When you remove them from oven, let sit on baking sheet for a minute or two for ease of removal.


2 eggs
1 cup unprocessed sugar
1 scant Tbsp brown rice syrup
3 Tbsp Spectrum Organics shortening (palm oil)
2 Tbsp sunflower oil (could use coconut instead I bet, but dd1 doesn't like the flavor)
1/2 t natural salt
1/4 t cream of tartar (I think, I just give it 3 good shakes)
1 cup of ground peanuts (if using store bought peanut butter you would have to modify the other ingredients, like no palm oil or salt probably)
3/4 cup Enjoy Life chocolate chips


how do I replace the eggs in this instance? I searched online but only came up with egg replacement products (which I don't have and do not wish to buy). One site said to replace each egg with 1 Tbsp of chickpea flour and 1 Tbsp of water. I have that... does that sound right for this recipe?

I have variously used milk, homemade applesauce and oil to replace egg. I find milk worked really well to increase the liquid ratio as cookies hardly need any binding. here's a lady that bakes eggless whose recipes I've used with success before. hth.

Ener-G makes an Egg Replacer powder that I use b/c DD and I are allergic to eggs. It's vegan. They sell it at our local Whole Foods, but it's typically sold out. We ordered three boxes (two to keep at my house, one for my mom's) from vitacost.com.

The cream of tartar is acting in conjunction with the eggs so you can remove that as well.

In this recipe the eggs are doing 2 things: binding and leavening. The pb will help with binding so in this case that's less important than the leavening (you don't want super flat cookies!)

For leavening I'd add ~1/2 tsp baking powder

For binding I always use flax eggs. They work well, are easy, and add healthy nutrients to baked goods!

For each 'egg' mix 1 tbsp ground flax with 3 tbsp water, beat, and then refrigerate for at least 10 minutes (the longer the better)

In cookies, I use 1/4 c. of apple sauce or one-half of a mashed banana. They don't rise as much as when you use eggs, but it never bothered me.

This recipe, being flourless, is going to be trickier than most without eggs.
