Okay, I have never cooked lentils but I have some in my pantry and I want to try some yummy recipes. Let me have them!!

I made a lentil soup from a package, bought at the local health food store. I just added water and extra veggies. My son loved it! It had lentils, barley and veg pasta. I added potatoes, carrots and celery.

Or what about honey (or maple, if you're vegan) baked lentils? I don't really like them, but DH sure does!

lentils cooked with chopped garlic & onion, salt and pepper to taste, served with rice, scrambled eggs (can add in broccoli), and a fried plantain on the side. perfect. for vegans, you can even skip the eggs and just have lentils, plantains and rice. delicious. in peru, if you eat lentils on a monday, you will have good luck.

plus the moosewood lentil soup recipe is excellent. here it is.

I love Lentils in soups, baked or the well-known Snobby Joes but always look for more/other ways to cook them!

I'm making mini lentil loaves tonight! Just google lentil loaf and you'll come up with all sorts of recipes. I like to put them in a muffin tin. They cook faster and you don't have to cut it. Just pop them out and eat!

Mini-lentil loaves are a great idea! I just made a big one (not sure how good it's gonna stick together as a 'loaf') but next time I'll have to try it with mini-versions!

I use oatmeal instead of rice (rice just didn't hold it together) and I also throw some ground flax seed in there. I use plenty of ketchup so the mix is very moist. Too dry and it falls apart.

I made lentil burgers the other night. I just kind of made it up as I went so I don't have exact measurements. I cooked a cup of dry lentils and added breadcrumbs, finely chopped garlic and onion, an egg to hold it together, salt and pepper. Formed it into a patty and pan fried it. Put it on a bun with all the fixins!

I adore the Turkish Spinach Lentil Soup from the Sundays at Moosewood cookbook. I have found several adaptations of it online, but none of them (of course) are just the same. Try checking the book out from your library---it's worth it, and my kids gobble it up, even the spinach.

I like to make a not-spicy curry lentil stew and serve it over rice.

Basically I just cook the lentils in some veggie broth until they are soft, then add yellow curry to taste. My kids love it.

For utter simplicity, kind of like tortilla española, I'm a big fan of mujadara. This looks to be a bit soupier than I usually do it (and I don't cover after the rice goes in), but it's the general idea.

Typically, I've made a daal with my lentils. I've also found, recently that they are a great protein to add to pot pies. Currently, I LOVE me some coconut curry pot pie!!

my 8yo will eat the whole himself i let him. he loves lentils. i've tried all sorts of soups and stews, but hsi favorite way to eat them is so simple...i just cook the lentils plain, either in water or stock if i have it. after they are soft, and some of the water has cooked off, i drop in a stick of butter and a teeny bit of salt. he's a scrawny kid, so he needs the butter.

my italian grandmother used to make lentils with escarole and then add elbow noodles that had been cooked in a different pot.

Honey Baked Lentils is soooo awesome! I don't know what it is, but I could eat the whole dish of it - it's like candy! Well, savoury candy - but just delish! Someone linked to the recipe above, but I don't include the onion. Just 1 cup lentils (I use red), 2 cups water, 2 tbsp olive oil, 2 tbps honey, 2 tbps soy sauce (I use Braggs), 1/2 tsp ginger, 1 clove garlic, salt and pepper. Bake at 350 for about 1.5 hours.
