When I even try this my diapers come out wonky and uneven. The last one laid super strange and messed up the elastic. I'm tempted to post a picture, but also super embarrassed to even let eyes see it. So, what's your trick??

without seeing your pic, I can't diagnose your issues.
but, I'll give it a whirl.

*before turning, trim your seam allowances away on the corners and across the tops and backs.

After you turn, only topstitch where the leg elastic is (or the legs and the back waist).

Pull the diaper FLAT, pin it to itself so it's folded the way you need, then sew slowly, making sure you clear the elastic so it will make a nice casing but not wiegh the elastic down.

I kind of turn my side seams on the legs so that they are more to the inside than to the outside so that it won't wick, but this doesn't matter on fitteds.

I HAVE topstitched diapers all the way around the whole diaper but it made no difference in function, so I quit doing it.

What I discovered is that I get the best result by topstitching before putting the elastic in. I sew the dipe, clip the corners, turn, make casings for the leg and back elastic, thread the elastic, sew it in place and then topstitch just the front closed, from one leg casing to the other. It doesn't screw with the elastic and they lay nice and pretty. Sewing on the hook and loop or adding snaps takes care of any shifting the tabs might do without topstitching.
