Recipe for homemade gluten free, casein free macaroni & cheese?

I am trying to get a jump on ideas for school lunches. I have two kids who are gluten and casein free so it's a little bit difficult. I am hoping to find a good recipe for homemade mac & cheese that they can have. I have gluten-free macaroni but I'm lost on the rest of the recipe.

Is there such a thing as cheese without casein? Or are you looking for a total sub, like a vegan version?

This is the one I've used with only a little modification. Do your kids like tuna macaroni salad? I've done that (making homemade mayo since I haven't found a safe one) and it stayed good until about the 3rd day (when the noodles got hard). We also do cold cut roll-ups, rice cakes with peanut butter, and soups and stews.

that is the best! I really like the nacho flavored one and the cheddar.. it melts fantastically in my mini crockpot, then I add rotel sometimes for cheddar cheese dip.. or I put broccoli in it and use it on a baked potato. It's by far my favorite cheese sub for things that are a more smooth liquidy consistancy.

Ive never made anything but pizza with daiya, but it's also a fantastic cheese sub that meets your needs. I bet it would work great if you used a gf free flour and made a bit of a roux and then added whatever non sweet milk sub you used to make a sauce.
