What to do with unripened apples

We went apple-picking last week and ds picked a few that weren't ripe. He was so, so proud of himself so I didn't have the heart to toss them on the ground. I believe they are red delicious apples. They are mostly green with just a little red on them. Can you do anything with unripe apples?

It sounds like you just have a couple. If you have a lot, you could make verjuice , which is really nice for salad dressings and marinades, instead of vinegar or lemon juice.

I've never made verjuice, and the bottled stuff I've used is from unripened grapes. Here's a recipe that google turned up:
