quinoa pizza crust-- help me

there's a vegan cafe in my area that makes the most insanely delicious pizza on a three grain "crust" *— it's vegan and gluten free and i know there is quinoa and i think some millet in it. it sticks together enough that it can be cut up into pieces, but you can't pick it up, you need a fork. i really want to make this at home but i don't know how to do it. i've found some recipes online but they all call for egg.

ideas??

I bet they use flax meal, which gels up and acts like a binder. Grind the flax and use 1 tbsp flax to 3 tbsp water to mimic each egg. It works best if you whisk it up and then let it set in the fridge for at least 20 minutes, optimally an hour.

do you have Vive Le Vegan by dreena burton? she has a brown rice pizza that is the same idea that you describe... you can just mix up the grains.. i bet quinoa/millet/rice would be really yummy. if you don't have the book, i can dig it out and see what procedure she uses to make it stick enough.
