Am I supposed to dehydrate soaked almonds?

I did try digging through this forum about it but couldn't find the answer I'm looking for. I have a bag of raw organic almonds with skins on and I am about to soak them in salted water. I don't have filtered water so I plan to use spring water sourced from organic land. I have NT, haven't read it all the way through yet, but couldn't find anything on why I should dehydrate them after soaking. Is this necessary and/or beneficial in any way, or just a matter of taste?

Yes, they are supposed to be dehydrated. I dehydrate mine for about 24 hours (usually a bit longer) at around 95 degrees. I think the point of dehydrating them is so you can store them, and they become shelf stable. Also, I'm not sure why anyone would want to eat soft, slightly slimy almonds, but I bet there is someone out there who likes them.

In NT it says:

"Nuts are easier to digest and their nutrients more readily available, if they are first soaked in salt water overnight, then dried in a warm oven."

Thanks so much for your reply. I used to adore eating soaked 'wet' almonds. I probably wouldn't mind eating them like that again, especially so if I just soak enough to eat for the day and no more than that - so no storage. Thanks again

I dehydrate mine too but at around 140 degrees.
