how about over night baked oatmeal can omit the egg and use flax there has to be something to use in place of the youghurt. in the am i dont use milk with mine just water. i bake it in a 9X13 and cut like a cake. you can add fruits & spices.

what about a sandwich type meal for snack and a hot meal for lunch.
non wheat flatbreads you can make your own using other flours.
non wheat bagles/breads with some filling could do the chicken or tuna salad

you could make a bean spead/dip using other beans.
the fried chick peas we love. i am wondering if you could try other beans maybe kidney beans
