brewer diet for pg while dairy and gluten free?

Hey y'all, so I am nearly 100% convinced that I have adrenal fatigue, and I think eliminating at least dairy but probably gluten as well would help my body heal. My midwives want me to follow the Brewer Diet for pregnancy, which emphasizes a lot of dairy. How can I get the recommended amounts of protein (my midwives said to aim for 80-100 grams a day) without dairy? I feel like I am constantly reaching for a little cheese to have with some whole wheat crackers to make a complete protein....so I am not sure what I can substitute to get enough protein in my day.

I am also low thyroid so I avoid soy as well.

I eat eggs and I do eat meat but this pregnancy I have had an aversion to meat so I have been going for more vegetarian sources of protein like lentils and brown rice, etc.

I guess I am asking mostly for snack ideas...but any advice on going dairy and/or gluten free during pregnancy would be appreciated.

Some snack ideas:

nuts
apple/celery with nut butter
jerkey
hard boiled/deviled eggs
I know not ideal but good if you need something easy: rice protein powder smoothie (berries, coconut milk, water pro powder opt:vanilla, sweetner)

I am on my second dairy and gluten free pregnancy and there is a lot of things you can make especially if you like beans...maybe check out some different cusines of the world for more ideas. I made homemade bone broths for calcium...I did aim for the 100 grams of protein but did not eat all the grain servings on the Brewer diet because I feel better on more fruits and vegs.
Also, you don't need to complete your proteins in the same meal. If you eat them in the same day that is good enough I read recently.
