what is coconut butter?

i saw it in a recipe online and was wondering what it was.

Love this stuff

I have some from a company named Artisana....and it is delicious. As far as I can tell it is just 100% coconut. I believe they emulsify it or something to make it smooth and creamy. I love it on toast or with a banana in the morning. I use it in my rice and beans and it is delicious.

Just curious...what is your recipe?

I have that Artisana stuff too! But I don't think that's what the recipe is referring to (even though it is called "coconut butter"). Generally coconut butter is just another term for coconut oil

No, no. Coconut oil and coconut butter were the same thing... until, Artisana came out with coconut butter. Now, they are different. Coconut oil is just the oil. But, Artisana makes coconut butter which is the coconut oil with the coconut flesh! It's thicker.

And, if you fry with coconut oil, do not fry with coconut butter; it will burn!!! ...at least that's what happened when I made popcorn with it. :-)

If any of us had actually bothered to read through the entire recipe, we would have seen this:

I think unless it is stated that the Artisana stuff is to be used, you would assume coconut butter = coconut oil, since the two terms have been used interchangeably for some time. What tipped me off to look further was the fact that there was already 1/2 cup vegetable in the recipe. Otherwise I would have assumed that they meant coconut oil.

Just a side note about coconut oil: try replacing some of the fat in your recipes with coconut oil for a different flavor/texture. I use it instead of butter in my tea biscuits and they come out totally different - much softer and with a better flavor!

I think I buy mine at Harry's...which in my town is actually owned by whole foods

....but any local health food store should have it.

My Whole foods carries it in their section with coconut and other veggie oils.
