Anyone have a fab oatmeal based breakfast bar recipe?

I'm looking for something along the lines of baked oatmeal. But something I can make ahead, freeze extras, and just be able to grab and go - rather than needing a bowl and spoon. I'll probably end up sharing with DS as well.

I neeeed the oatmeal and coconut oil regularly for my cholesterol And I just don't find/make the time to make oatmeal during the week and I end up grabbing a bagel at work (bad plan). I have a ginormo bag of steal cut oats to experiment with! (If your recipe requires rolled oats, please let me know!)

What about making granola instead? You can do it in the crock pot, if you have one.

I love granola, but I'm really looking for something more grab and go. I like granola with yogurt more than loose.

Oh, I'm going to try #1! I need something quick to grab in the mornings because DS2 always needs to nurse for a long time and DD2 wakes up with low blood sugar and is horribly cranky unless she eats right away.

I use that crockpot granola recipe (modified for whatever extra ingredients we have on hand) and love it on some homemade yogurt!

Katie at her Kitchen Stewardship blog has created an E-book called "Healthy Snacks to Go" that contains recipes for granola bars, and it is worth every penny. They can all be soaked as well (she includes directions for that) and many of them contain coconut oil.

also, you can just make bars out of your leftover oatmeal. just add a couple eggs, some molasses, cinnamon, ginger, vanilla, and a bit of baking powder according to volume. we call them oatmeal chewies. uber frugal!

There's a thought! Ginormo pot of oatmeal on the weekend and some bars for the weekday mornings. Temp? Time?

Yes, yum. I made those all last winter. If you puree some or all of your dried fruits (raisins, apricots, whatever) they are so chewy and stick together great!
I also never put the corn syrup in (calls for 2 TB), have used brown rice syrup, brown sugar, no sugar, with peanut/nut butter or without, etc.
The recipe is an amazing base recipe that you can mess with all you want. I was going to post it here too.

These can be completely raw or partial. My most picky eater can't get enough of these, and they're easy to make so I can have them on hand all the time.

No-Bake Nut Butter Energy Bars

> 1/2 c. agave nectar
> 2 tbsp coconut oil
> 1 1/2 c. nut butter
> 2 c. oats
> 2 scoops vanilla protein powder
> 1/2 c. raisins, dried cranberries or dried fruit of choice
> 1/2 c. choc chips
> 1/2 c. slivered almonds
> 1/2 c. sunflower seeds

> Warm agave, coconut oil, and nut butter in saucepan on low heat until soft
