Fall recipes?

I am a new SAHM and working on streamlining my homemaking tasks. Thus I am going to focus on making my own recipe book with seasonal recipes. I would really love to try to savor the seasons and I think eating in season will help.

This is one of mine. I put it all in a crockpot in the am and munch away later.

White Bean Chicken Chili

Amount Measure Ingredient -- Preparation Method

1 Tablespoon olive oil
1 Small onion -- peel/chop fine
2 Medium garlic clove -- peeled/chopped
1 Medium red bell pepper -- chopped fine
2 Cans white beans, 15 ounces each -- undrained
4 Ounces green chiles -- canned/diced
1/2 Teaspoon ground cumin
1 Teaspoon chili powder
1 Can low sodium chicken broth -- 14 1/2 oz.
1/2 Pound roasted chicken breast meat -- cut in 1/2 in. cubes
2 Tablespoons lime juice
2 Tablespoons cilantro -- minced
6 Tablespoons salsa -- optional

In a large pot heat the olive oil over medium heat. Add the onion, garlic,
and red pepper. Saute 5 minutes.
Stir the white beans, chiles, cumin, chili powder and broth. Bring to a
boil, reduce the heat and simmer 10 minutes. Stir in the chicken and simmer
5 minutes.
Stir in the lime juice and cilantro. A tablespoon of salsa can be used to
garnish each serving of chili, if desired.

Your recipe sounds delicious.

Two of my family's favorite cooler weather meals are --

--"Foggy Day Chili" from Food To Live By by Myra Goodman -- I usually make it with ground turkey
--"Potato-Leek Soup" from (I think!) The Enchanted Broccoli Forest -- This recipe is vegetarian, but it can also be made to fit a vegan diet

Today, I checked out this book from the library -- "Recipes from the Root Cellar" by Andrea Chesman -- it looks like it has some cooler weather crop recipes. Perfect for fall.

To me fall means pumpkin.

I love this pumpkin bread. I usually replace half the oil with unsweetened applesauce and double the ginger. I've also added dried cranberries.

I just tried this pumpkin pancake recipe yesterday. I really liked the pancakes. They're a bit more trouble than I'd usually go to for an everyday breakfast, but so yummy they're worth it.

I make a lot of chili in the fall, but not from a recipe. I just throw stuff in.

We also like chicken and dumplings. The hillbilly housewife recipe is pretty good.

Chicken Pot Pie is another fall favorite. Again no real recipe though. I make a rue after sauteing the veggies (usually carrots, onion and celery) and stir in enough broth to make a gravy then mix in some cook chopped chicken, add frozen peas and/or corn. Put in casserole dish, top with pie or biscuit dough and bake.

I love fall food.

I use this recipe too, love it! I add in some frozen mixed veggies while it's coming up to a simmer.
