What is the best milk substitute to use?

In a recipe that calls for 1 cup of milk what is the best milk substitute that won't make the recipe (quiche muffins) taste bad? Rice or soy? Goat? My kids can have goat milk, just not cow milk.

You can use goat milk in any recipe calling for cow's milk.

For "non dairy milk substitutes" in general, the best substiture varies depending on the recipe. Rice milk works in sweet recipes; soy milk in savory ones (and some sweet ones too.) Oftentimes you can increase the other liquids in the recipe and not use any milk substitute at all. Cakes work with juice or water in place of milk. Gravies work with broth in place of milk.

For quiche, I use extra eggs and no milk at all.
