Ive been invited to a impromtu BBQ/adoption event by the people who run the animal rescue I volunteer with. I've been asked to bring a dish to pass. Here's the thing tho several of this people compete in professional BBQ competions and there is atleast 1 pastery chef. I'm a pretty good cook, but I'm intimidated. I want something easy and good that a wide variety of people would like. I cant think of a thing I want to make.

My fave crowd pleaser easy recipe is pilaf-y rice:
saute an onion in your rice cooking pot in some olive oil. when it's translucent, add 2 c. of white or brown rice, and a big handful or two of raisins. Saute until it changes color (barely obvious in brown rice, very obvious in white rice it's maybe 5 minutes.) Add sufficient stock to cook the rice plus a little smidge more for the raisins. Cook rice as per normal (bring to simmer covered, then turn down til barely simmering till cooked.)
add butter, salt and pepper. people love it. and if you've got lots of bbq champs, then it would be great to bring a grain to accompany their bbq

I usually just bring salsa/bean dip/chips or pasta salad:
1 bag of multi-colored pasta (rotini type stuff), cooked.
1 container cherry/grape tomatoes
1 can black olives, drained
1/2-1 bundle of broccoli, cut up
1/2 a red onion, diced
1 8oz container mushrooms (preferably baby bella ,sliced)
mix all together, then pour italian salad dressing over top and stir in:
1 1/3 cup olive oil
1 tsp. Onion powder
½ cup red wine vinegar or cider
½ tsp. pepper
ÂĽ cup Parmesan cheese
½ tsp dry mustard
2 tsp. Salt
ÂĽ tsp. Paprika
1 clove garlic or 1 tsp. Garlic powder
Mix all ingredients together. Tada!! Best after a day or so

Just remember even accomplished cooks like junk food and comfort food.
I myself, usually bring fresh, in season fruit to events like that because it's healthy and easy and most people like fruit.
Another easy one is brie with a nice bread and big bunch of grapes. That is pretty chic ime.
You could also go with veggie pizza (crescent roll crust, cream cheese seasoned with ranch, chopped veggies, shredded cheese). Junk food, but sooo good!

Okay, this recipe is easy-peasy and is always a hit when I bring it to potlucks. Serve with pita chips, crackers, or bread.
Artichoke Dip --
Mix together 1 jar artichoke hearts - drained and chopped
1 cup mayonnaise
1 cup parmesan cheese
Bake at 350 for 30 minutes.
Could it get any easier??

Lately I've been taking a brownie sheetcake to gatherings. You make a double batch of brownies in a jelly-roll pan. Then, make the chocolate sheetcake frosting from thepioneerwoman.com, spread it over the top and you're good to go. You can't go wrong and it doesn't matter what kind of brownie you use. I've even done this gluten-free with great success.

I've brought this rice salad to a couple things and it has been a hit:
Mix cooked brown rice with chopped mangos (or mango salsa), fresh salsa (bought from store or homemade), chopped cilantro, and black beans. Add lime juice and maybe a little olive oil, salt to taste.
Delicious and healthy

My favorite is baked bean dip.
1 large can vegetarian baked beans
1 small jar salsa
1/2 block moz cheese, chopped
1/2 block cheddar cheese, chopped
1/2 block other cheese (monterray jack, colby, whatever), chopped
Heat slowly until mixed together.
Serve with chips.
Looks sort of like puke but tastes AMAZING. My mom will absolutely NOT TOUCH beans, and she loves this.
