I need some help.
At least once a week, we have friends over who have food restrictions.
No one in my family has food restrictions so I'm not used to this and need some creative help. I want everyone to eat the same so the little guy with the restrictions doesn't feel left out.
We have a little boy who cannot have gluten, milk, eggs, or soy.
Did I mention I'm a bread baker and a cheesemaker?
And that everyone in my family are foodies. My kids love artisan cheese fondue and rare balsalmic vinegar sprinkled on everything.
So far, I've done gluten free rice pasta, gluten free hot dogs, and turkey roll ups. I make sure his mom double checks all the labels for stuff like the pasta before we eat it.
The pasta was kind of neat a few weeks ago because I have a lot of home canned sauce, so the food restricted boy could eat it. Normally, the store stuff has wheat or soy so he wasn't used to tomato sauce.
I don't want out meals to devolve into gluten free hot dogs - which they kind of have for 2 weeks now. They're GREY for crying out loud. They don't taste bad but they're GREY.
I did order some rice molds and vegetable cutter shapes today and we'll do something with those when they come.
But I need some fun, good ideas for healthy meals and snacks for everyone.
Oh, and this day that we do every week is supposed to be for homeschooling. So, I can't spend hours cooking or we won't get our "school" done.
But I would totally be open to making things the night before.
And one more "oh," my kids LOVE vegetables but the food restricted kid doesn't so much. (I love this kid but I've jokingly told his mom I may throw him in the microwave if he adds MORE things I can't cook to my list!
) So vegetables would have to be either extra fun or extra yummy.
And my extra yummy trick for veggies is usally cheese. Ack!
And they can do nuts. Thank goodness. I can get them all to eat carrot sticks and celery with peanut butter.
I like making good lunches for everyone so my friend, the other mom, can rest a little. I like having her know everything in my house is "safe" for her son to eat.
