S/O What to check for when buying meat/poultry/eggs from a farmer?

This is an extension of my question in the raw dairy thread.
I have an option of joining a local co-op in my area for grass-fed beef, pastured poultry, pork, & eggs. It is advertised as being certified organic (I did research that, and his farm is listed on the certification website through the state as being current), and 100% on pasture, with the chickens being given no soy. The beef & pork is processed at USDA state certified processors, the chicken at the farm.

I have never been there, nor have the people in this co-op, and it is too far for me to drive with a screaming baby (perhaps next year though). There is a driver from the farm who makes all the deliveries.

Would anyone be comfortable buying from this place, site unseen? I just keep thinking, 99% of us have never been to the farm we buy our store groceries at, yet we still eat them

I have a much easier time buying meat from a farm unseen since you cook it all (if you don't cook it then I would be more leery)
