So, I've already soaked these dried red beans...

I was planning to make Cajun-style red beans and rice today, so I set the beans to soak (on the counter) last night.

Now plans have changed, and there's no way that I'll be able to make them until tomorrow.

Will they be ok if I just let them soak until early afternoon tomorrow?

Or, should I drain them now, and store them in the fridge (dryish) until tomorrow?

Are they going to be not-great no matter what I do?

Thanks!

I think you are fine. We soak our beans more than over night due to the same reason, something coming up!

I change the water and let them soak more, most the time we soak for a couple days anyway, same with almonds.

As Xantho mentioned, definitely change the water!
After changing the water, you could continue to soak/germinate them at room temperature or put them in the fridge IN water.

I would change the water and stick them in the fridge.

I made them tonight, and they were great.

Thanks so much, mamas!
