Question about bean soaking

Okay, this is the first time I soaked my beans. I put water to cover (pintos) about 8:00 am and let them soak til about 12 midnight. It was pretty warm. That was a 16 hr soak.

Then I cooked them in the same water overnight. Was that wrong? Now I'm reading ur supposed to change the water when you actually cook them. Should I now toss these since they were cooked (in the crockpot) in the same soaking water? If it were me, I'd just eat them and see how it goes, but I cooked these for DD and I don't want to take a chance on her getting sick.

I did taste them and I will say that I like the flavor much better the old way (not soaking first...)

Yes, you want to discard the soaking water-- you're soaking them to remove indigestible carbohydrates that cause flatulence and gas. Some people can tolerate unsoaked beans-- it's not a food safety issue or anything, and it won't make anyone sick. But most of us find we digest them better (and stink up the bedroom less ) when we soak and discard the water.

I do the rapid soak for my dry beans. In fact I just made a pot of chili yesterday.

I rinse the dry beans and put them in my pressure cooker. Cover with 6 cups of water. Bring to a boil and boil for 2 minutes. Turn off heat, move to another burner and cover. Let sit covered for an hour.

After an hour, add just a tad of olive oil or other oil (has to do with pressure cooking them) pressure cook them for 10 minutes. Do natural release pressure. Drain and rinse. They are soft and ready to go.

I haven't invested in a pressure cooker yet -- that's probably gonna be my next purchase!

Love my pressure cooker. I also make my steel cut oats and my brown rice in it.
