I read through the thread...sometimes. :0) We're supposed to be taking part in the 30 day challenge, but tbh it's been more of an experience where our 80/20 is flipped. My biggest challenge is our budget - most of our meals had some sort of bean, but most likely grain filler. I'd never serve just burgers for dinner as I'd need somewhere north of 2lbs of ground beef just for the one meal. Which leaves me struggling with what to swap out for the beans/grains. And then of course there's the fact that neither my dh nor my dd can have eggs which kicks out yet another cheap meal idea. It's been frustrating.
rhianna813 - I've struggled a bit with this, but one option that I've used somewhat successfully would be some sort of lasgna type dish, but replace the noodles (or grain in this case) with zucchini or eggplant slices. It's a bit pricier (at least for us), but I was fairly surprised at how well my kids responded to it.
