Need vegan elimination diet dinner ideas

DS started an elimination diet today and I am making my grocery list. I need some ideas on what to cook for all of us for dinner. It will have to be veggies or bean based.

What we cannot eat:

soy
gluten/wheat
dairy
eggs
corn
sugar
dye
chocolate

I have sloppy lentils (on gluten free toast) with salad, pineapple-cashew quinoa stirfry from Veganomicon and black bean bowls with toppings, so far. I need some more ideas. Lunch and breakfast we have covered, just need more dinner varieties.

We've basically been doing bean, veggie, brown rice stir-fry, with a different "spice" or flavoring every day. It's been successful with us.. we do: Mexican, Indian, Italian flavored, Ratatouille over rice, Cajun, Asian... we vary it by the veggies and beans that we use.

I don't have any recipes, but maybe you can look some up in those categories and see if it helps? We have an abundance of garden veggies, so every thing I make is whatever I have that day.

Red lentil curry should qualify:

1 tbsp oil
1 onion
2 heaping spoonfuls of curry powder
1 can of light coconut milk + water to make 3 cups
1 cup red lentils

1 pound spinach (frozen works fine)
2 cups peas and carrots
2 cloves crushed garlic
3/4 tsp salt

Saute onion in oil until translucent, stir in curry powder, add water, coconut milk and lentils, simmer for 10-15 minutes. Stir in remaining ingredients, heat through. Serve over rice topped with raisins and chopped nuts.
