Fresh from the Vegetarian Slow Cooker. I'm borrowing it from the library right now, and it's pretty good. I don't know if I would buy it, but I am going to renew it so I have it for another month, and then I"ll copy down all the recipes that we do like.

I third "Fresh From the Vegetarian Slow Cooker". We regularly make soups from it, to stock our freezer.

Also look at the "A Year of Slow Cooking" blog
http://crockpot365.blogspot.com/

And the following thread on MDC:
http://www.mothering.com/discussions...d.php?t=237665

There are some vegetarian recipes on there, and a few meat recipes that can be adapted.

There are also 30 vegetarian slow cooker recipes on All Recipes:
