Beets?

We now have almost a dozen beets from the CSA. We like them, we've been eating them a few different ways (cooked with black beans, simply roasted for salads).

I'm running low on ideas that I feel like making and eating, and especially something that'll use a lot of them up. Something new I can try that'll be good?

Got this recipe from my CSA provider - sounds interesting...

Country Special Beets: Stir together -1/2 cup sour cream, 2 Tbs vinegar, 1 Tbs minced green onion, 1 Tbs sugar, 1 tsp salt, 1/8 tsp pepper and 4 cups sliced cooked beets in saucepan. Heat slowly, stirring occasionally. Do not boil.

This is fantastic, and if you use a food processor to shred the beets it saves a lot of work/mess:

I love borscht. There are light cold varieties (sometimes with cucumber, yogurt, dill) and heavier hot varieties (meat, cabbage, beans, carrots, etc.). There are really a lot of variations. I'm sure you can find a ton of recipes online.

I also like them roasted, but cold and cut up with yogurt, salt and dill.

You can grate them raw on salads.

We eay a lot of beets from our csa too. I like this:

Sometimes we saute them and add to pasta with a little feta or goat cheese.

Ooh the beet latkes sound great (and dd might actually try them) as does the rosti - plus those are things we haven't done this year with 'em.

Beet salad with goat cheese or blue cheese & sliced toasted almonds, drizzled with reduced balsamic so it's good & syrupy!

I seem to always be giving this recipe, but it really is my fave use for beets. Roast or boil and chill. Peel and shred. Mix w enough mayo to turn it all pink, plenty of crushed garlic (not chopped), s&p. Let sit a few hrs. Right before serving, stir in a generous amt of walnuts (i like big pieces, not a chop).

we HATE beets here ----but we like them "pickled" with eggs--we just got yellow beets, made our eggs with them and the regular PINK eggs and they looked (and tasted great!)together--wonderful colors--we get quail eggs and the mix was good

This is a really tasty recipe. I just made it last night actually:

Moroccan Beet Salad

1 bunch beets, peeled, steamed (or boiled) and cut in bite size pieces

juice of a lemon
1-2 tsp cumin
2-4 tsp olive oil
chopped parsley
salt and pepper to taste

Let beets cool to room temperature. Mix cumin, olive oil, salt and pepper. Pour over beets and let stand at least half an hour. Toss with parsley just before serving.

I like beet and avocado salad. Steam beets, cut into same size chunks as avocado, mix with some balsamic, olive oil, salt/pepper and any more seasonings you want.

I've always roasted them, but the other night I didn't want the oven on so I put them on out cast iron pan out on our grill. OMG so good! It only took about 15 minutes (grill heated up on high then dropped to med to cook; sliced them into 1/4 inch rounds prior to grilling) and the beets had a sweeter taste to them versus earthy.

I love beet salad. I had an incredible one at Delmonico in New Orleans once with a thin layer of yogurt on the plate, thinly slices beets, date molassas drizzled over. It was to die for.

I also love beet raita.

I am a huge fan of borscht. Here is the recipe I use more or less...

1 large onion, peeled, quartered
4 large beets, peeled, chopped
4 carrots, peeled, chopped
1 large russet potato, peeled, cut into 1/2-inch cubes
2 cups thinly sliced cabbage
3/4 cup chopped fresh dill
3 Tbsp red wine vinegar
1 cup sour cream
Salt and pepper to taste

red velvet cake with beets we just made this and it was really yummy. Didn't think too much of the frosting recipe with it though.

grate them into cakes, brownies, salads

have a few steamed on hand and puree them into dips, hummus, potatoes for that pretty pink color.

somelady ~ thank you so much. The people at my CSA farm made the chocolate beet cake and i had been looking for a recipe. it was so good!!

i love beets and they are about DD's favorite veggie!

We love them roasted with balsmic vinegar, steamed and made into a salad with mint and navel orange with balsamic dressing, beet soup, beet and orange soup, roasted beet risotto.
