Oh, if I had unlimited time in the kitchen, I'd make Chapatis---what we call chapatis, usually known as Naan. Also, a nice beef and vegetable pilau, homemade samosas, mandazis...like Kenyan donuts. I'd also do some authentic German desserts--tortes, tart, and puddings. And, I want to make homemade bacon, and haven't gotten around to that yet. Since today was a holiday, I did have much more time than usual--made homemade bean soup, some blueberry muffins, chocolate chip oatmeal cookies, didn't get around to the yeast rolls to go with the soup.

I would definitely bake some bread. tamales is a time consuming sort of thing I don't normally make. I might roast a chicken for the girls (doesn't take long to cook but takes forever to clean up and then if I make broth and/or soup right away from the left overs even longer). Clean up for me is a much bigger indicator of what a hassle something is to make than the actual cooking. Lasagna is a PITA...both the making and cleaning up after. thats a good all day project. especially if you make some home made garlic bread to go with it and a salad with home made dressing with fresh herbs....of course some spectacular dessert.
