Vegan Raw food meals-dinner

One of my friends eats vegan raw foods. I understand what she eats but I have a hard time coming up with ideas on my own for meals beyond a salad.

She and her husband are probably coming over for dinner later this week and I would like to make something everyone can eat. Most of the time she just will bring her own food or eat before she comes because she doesn't expect to be accommodated by everyone.

Any dinner suggestions for 4 adults and a 4 year old?

It's easier to recommend recipes if we know what kinds of appliances you have and/or how easy or complicated/gourmet you want to make the food.

Do you have a Spiral Slicer? You can make zucchini noodles for spaghetti or vietnamese zoodles:

If you don't have a spiral slicer, do you have a mandolin slicer? You can slice then make them into noodles.

Do you have a high speed blender? How about just making a dessert?

I have a food processor, a blender (a regular/basic one) and a mandolin slicer.

I just want to make something other than my go-to foods, which are guacamole and salad. I could go for something moderately complicated but would prefer not to have to hunt down ingredients.

Ahhh, then you can make the spaghetti.

You can also make collard green wraps. Just marinate portabella mushroom in braggs or nama shoyu. That would be your "meat". Then add them to half a de-stemmed collard leaf. Roll it up with shredded/julienned carrots, zucchini, tomato, and guacamole!

If you are making a salad, make a raw dressing... like a cucumber-sunflower seed recipe. About 1 cup germinated sunflower seeds, juice of 2 lemons, 1 peeled cucumber, onion powder, sea salt, and sweeten with agave or raw honey. (I can't remember exact measurements)

Or make a cucumber salad using the dressing in the vietnamese zoodles and just slice and quarter cucumbers with shredded carrots. Skip the zoodles. I make this all the time. The dressing is just so yummy and refreshing! A friend of mine asked for this recipe b/c her 3-year-old really liked it. So, it's kid tested.
