Pickled Beets

So, I want to try to ferment beets. I love pickled beets. We have some growing in our cold frame and I want to get to them before they get much bigger. In "Wild Fermentation," Katz's recipe is for sour beets. Is this the same as the pickled beets I am thinking of?? I am willing to try a new recipe but I already know I like pickled beets. Would anyone have a different recipe?

not to me, when I "pickle" beets I add vinegar to cooked beets-totally different

What I think of as pickled beets have sugar and vinegar in them. The sour beets from Wild Fermentation would not be the same.

Good to know. That would be quite a shock, then. So has anyone fermented and made the sour beets? Now I have a decision.... sour beets or canned pickled beets. I don't know, I guess I should give em a try. I only have a small amount though. Don't want to waste em. Hmm...

i just put some in a jar with some cuke slices and a brine. smells REALLY yummy but they're not ready yet as it's only been a day or three. make sure you really wash the outsides of them. i also put a grape leaf on top to keep them under the juice and hope for a bit of retained crunch.

i say go for it!

I've made sour beets from WF before, and used them in borsch. It turned out pretty good.
