Tub of plain yogurt that expires tomorrow: what to make??

Strawberry smoothies, and freeze the leftover smoothy as popsicles.

Use yogurt in place of buttermilk in a buttermilk pancake recipe (may need to thin with water.)

Let it drain in cheesecloth overnight to make yogurt cheese, discard the whey or save for baking, and blend ywith crushed pineapple (no juice) for a spread for bagels or toast.

Lemon yogurt cake. I don't have my recipe at hand, but this one is pretty close to what I normally do.

Raspberry or Blueberry muffins. Just replace the milk or buttermilk in your regular recipe with about 1 cup of yogurt. Depending on how thick the yogurt is, you may need to add a couple of tablespoons of milk to thin out the batter a little.

Tazyiki like dip and zucchini pancakes. I did that with soy sour cream a couple of weeks ago and it was so yummy!

If it looks & tastes ok, I wouldn't worry much about expiration. Yogurt, in my opinion, tastes quite a while to "go bad." It just gets tangier, which is ok by me. But...tzatziki is yummy (just strain the yogurt & the cukes so it's not a watery mess.

I also make my coleslaw dressing with almost all plain yogurt, rather than mayo (I use maybe a spoonful of mayo). I've also done this for homemade ranch dressings.

This may sound weird but I use in pound cake or brownies in place of the sour cream.

I would make smoothies, gyros with taziki sauce and then maybe make MORE smoothie and freeze into popsicles

An Indian curry of some sort. Also, I don't worry so much about expirations on yogurt. It should be fine for a couple more weeks, ime.

If I was really busy, I'd just make a few smoothie recipe serving sizes and freeze it. I don't tend to let things go too far beyond expiry (maybe a day).
