Hi, going apple picking. Want to get my recipes in order. Would love new ideas for SOY free, DAIRY free apple breads, muffins, pies, cake and especially a crumble. Eggs are fine. Thank you! Can't wait to start!!!!!!

Our favorite thing to do with apples right now is to peel and slice, and also peel and slice a butternut squash or a pumpkin. Put the apples and pumpkin in a dish, and top with a nice drizzle of grade-B maple syrup and a few generous pats of butter. You can add some spices-- cinnamon, nutmeg, or ground cloves, if you like. Then I bake it until the pumpkin is firm but you can insert a fork. Then top with a big handful of rolled oats, and then bake some more until the apples are soft but not mush. I usually do it at 350.

Since you're not doing dairy, you'll want an alternative fat to replace the butter-- I would guess coconut oil would work just fine, as would lard if you can get good lard. And brown sugar will work if you don't have maple, and so will honey.
