ideas for getting down... FUN and FAST with apples?

i went to the apple orchered today and have tons of yummy apples to play with! i am going to make apple sauce tonight.... YUM! but i dont know any other FAST ways to Doctor up apples...

i remember as a kid doing stuffed apples at a friends house. they we SOOOO good but cant for the life of me remember how to do it. can some one help me?

I don't know how to make stuffed apples but I love apple crisp for a fast and easy recipe. Peel and slice up the apples and then top with a mixture of brown sugar, cinnamon, oats and butter and bake till golden and bubbly. Soo good! I use Betty Crocker's recipe.

I'd imagine the topping mixture would taste pretty darned good stuffed into a cored out apple and baked too. Now I'm drooling and craving apple crisp and sauce.......

last year, my BFF and i took all our kids apple picking. then we spent a day in the kitchen making spiced apple butter, apple maple jam, and spiced apples in cinnamon syrup. all 3 recipes are in the Ball canning cookbook.

i also made this apple cake. i found the recipe online ages ago and i don't know where it came from. i'll give you the original with my alterations, cuz i can't just leave a recipe alone you have to make this by hand, and stir with a wooden spoon, or else it won't turn out just right. trust me!

2 c. sugar (i used brown sugar)
3 c. flour (i used half whole wheat and half white)
1 tsp. baking soda
1/2 tsp salt
1/2 tsp cinnamon (i used a whole tsp)
1 c. oil (i usually sub for half the oil with applesauce)
2 eggs
3 c. chopped apples (i prefer the tart ones, but anything will work, really)
1 tsp vanilla (preferably real vanilla, not imitation)
1 c. chopped nuts (walnuts are best, pecans are yummy, too)

optional: i add a tbs or 2 of ground flax seed.

i've also added in raisins when i didn't have quite enough apples to make up 3 cups. i think i used 2 cups chopped apples and 1 cup golden raisins.

whisk or sift together all dry ingredients. stir in everything else with a wooden spoon (don't mix in a separate bowl, just add in to the dry ingredients and stir). grease and flour a 9x13 cake pan. pour batter in and smooth out. bake at 350F for 50-60 minutes.


it's absolutely delicious. i'm usually lucky to get one piece before all my guys clean it up!

i'm working on a gfcf version of this one, too. if anyone wants the latest experimental version, let me know (i won't take it personally if you don't )

Baked apples
Take the core out and put the apples in a baking dish, now stuff the hole with dried fruits, we usually use sultanas but dates or anything you have on hand is fine. I also like to add a bit of cinnamon. I put a few dots of butter on the top too.

Bake until the apples are soft. I think they usually take about 20 minutes or so.
