being creative with what you have

We are really broke right now and getting low on food. I was pretty proud of myself for actually coming up with a decent dinner the other night. We had a little bit of lentils, a little bit of barley, and I threw it into a pot with some broth, a potato, a carrot, and a little bit of frozen corn, to make soup. It was looking good but not looking like it was going to be enough. I wanted biscuits to go along with it, and was sad because I didn't have all the ingredients. I got inspired by Caroline Ingalls from the Little House series - I am reading The Long Winter to my daughter and when they ran out of food, they ground kernels of wheat in their coffee grinder to make flour for bread! So I figured if Caroline can make bread with kernels of wheat, surely I can come up with some biscuits.

Problem 1 - not enough flour. Found a box of cake flour left over from dd's birthday, and used half that and half regular flour.

Problem 2 - not enough butter. Found shortening in back of fridge, from frosting, also from dd's birthday. Used half shortening and half butter

Problem 3 - no milk. Watered down some heavy whipping cream. It's kind of like milk!

They were different tasting from my regular biscuits but not half bad!

I would love to hear other people's stories of coming up with decent meals from a pantry that looks pretty bare. Please share!

When I was in school I would make pasta dishes from the different things that came with pizza.

Last month we were down to one boneless-skinless chicken breast, a very few sad baby carrots and half an onion(there are four of us to feed). I had a little flour and milk left and found a partial bag of peas in the freezer. I simmered the chicken with the sad veggies and used the milk and flour+ baking powder to mix up some homemade dumpling batter and turned out some really yummy chicken and dumplings that actually fed us for two days!

Tonight the cupboards are pretty bare again but we had some mozzarella and some turkey bacon. We were out of regular flour so we're using some leftover whole-wheat pastry flour to make a crust and we're making barbecue-bacon pizza.
