After school snack and lunch box ideas

Please post your ideas for quick, healthy after school snacks! Or direct me to good sites or threads on the subject. If you have some good lunch box ideas, that would be great too- ds's class is nut free this year.
I don't mind cooking things that are easy. Sweet potato is our only known food sensitivity. I have a decent list going, but would like more vegan options- we're trying to cut back on animal products (again).

Burritos! They're fresh in my mind from the burrito thread.
If you have all of the ingredients in the fridge they're super easy to just put together, and you can make them meat and dairy free easily.

oooh, I forgot about this that I use as burrito filling! Thanks for reminding me

Any more ideas? So far, I have chickpea spread (aka mock tuna), veggies with hummus, fruit, and a few others.

I have "Vegan Lunch Box" and "Vegan Lunch Box Around the World" out from the library right now - I bet you'd find lots of good ideas in there!

Let's try that again.

Awesome looking avocado dip, I saved it to my recipe box. I loooove allrecipes!

You could do something like a bowl of quinoa salad, pasta salad, lentil salad, bean salad etc., and leave it in the fridge for snacking for a 3 days, or however long before everyone will get sick of it. It would also portion well for lunch boxes, and probably be yummy with tortilla chips.

Alton Brown has a recipe for dried fruit that doesn't require a dehydrator, it's probably somewhere over on foodnetwork.com, and if they come back uneaten they can go back into the orginal batch, less waste that way!

Banana/zuchinni/carrot breads make a yummy dessert. I don't know of any vegan recipes offhand, but I'm sure they're out there.

I always go for fresh veggies or fruit right after school with a protien (either peanut butter or a string cheese.) Salad and pasta salad go over really well with my daughter too.

Pasta or bean salad and the like is a great idea! I do fruit and veggies with dip a lot, so it's great to have some ideas to shake it up a bit

I'll look for those cookbooks at the library- I love getting ideas from cookbooks!

Today, I had a huge stack of wholegrain blueberry pancakes that didn't get eaten at breakfast (long story). It's easy to reheat them quickly in the toaster as a snack, but my kids will eat them cold too.

Subbing for ideas. So far I plan on putting soups, meatballs, noodles & mac & cheese type stuff in their thermoses for lunch (they haven't started long days yet). After school they have lunch, then supper. If they need a snack it's usually fruit or a cookie on occasion.

If you have a toaster oven, my mom used to make toast w/marg, cinn sugar and thinly sliced apples on top. Put it in the toaster (flat) to make it warm. I loved it.

Well....How about some sushi rolls

Here is the recipe procedure: Place 1 whole wheat wrap on the cutting board..Spread some cream cheese and add ur cold cuts. Roll the stuffed wrap into a tight roll. Cut the roll into 8-10 pieces...grab ur chopsticks and chow down

How about grilled vegan cheese on toast, or individual pita/whole wheat tortilla pizzas with tomato spread and create your own toppings?

Love this idea! I've done something similar with cream cheese,black beans, and salsa.
