We love our toaster oven. I use it a lot in the summer, because our stove is central in our house, and it heats up the whole house. I have an aluminum pan, a glass Pyrex dish, and a le creuset cast iron dish that fit in the toaster oven. It also comes with a tray, though mine doesn't clean up well, so I mostly cover it with aluminum foil to cook with it.

For starchy sides, you can bake potatoes (obviously), roasted potato chunks, frozen french fries, and rice in it.

You can use your regular pots on the grill. Is it charcoal or gas? If it's gas, things don't even taste much different in pots. That way, you could make rice or steamed veggies just like on the stove top. It'd take a while to get the timing right, but it could work.

My kids like raw veggies with dip. I think I'd do that as a side dish very often this month. As well as fruit. Very easy, no cooking.
