Dairy-free baked oatmeal

I used to make baked oatmeal by soaking the oats overnight in yogurt and water, but we are dairy-free now and I have not gotten around to making coconut milk yogurt yet. I don't want to use soy yogurt (don't like it), which is the only non-dairy yogurt I can buy here. What else could I use to soak the oats in? Would rice or almond milk work? Do I still mix it with water?

I have never used yogourt for baked oatmeal, sounds good though!... I make mine with soy milk, almond milk or coconut milk... really what ever I have on hand... I think rice milk might be too watery. I would be for me... and I wouldn't add water...

OK, cool. I think I'll try almond milk. Do you still leave it out to soak overnight/for about 8 hours? Is it still safe to leave out on the counter to soak? (I thought there was something about the good bacteria in the yogurt preventing the growth of bad bacteria, and that's why it was safe to leave that out on the counter... any concern when using other milks as a substitute?)

If I am not using steel-cut oats I sometimes just let it soak for an hour or so before cooking or I leave it in the fridge over night and put the pan in the cold oven from the fridge...

I haven't tried the soaking method yet, but I did try this recipe this week and loved it. It's vegan.

It seemed to dry to me, so I used twice as much applesauce and added a 1/2 cup of coconut milk. Yum!

You could use coconut milk in any of the recipes I would think as long as you like the flavor. They also make a great coconut milk yogurt that you can get at Whole Foods, that you could use for the yogurt soak method. I plan to try that myself this weekend.
