Stuck in a lunch rut!

Lunch is my hardest meal. The kids and I are in a rut. We home-school so we are home all of the time for lunch. Sometimes we eat left overs if we have them. Lately the kids have gone on a cheese strike, which is okay with me, but it cuts out some options. It seems like we are eating a lot of peanut butter & honey, veggies and hummus. Other than that, my brain is stuck. Please share your suggestions. I have a five year old who is not generally picky and a 2 year old who goes through phases. Thanks!

The weather is cooling down here so I'm heading into warmer lunches

Jacket potato, topped with cheese/beans/tuna
Soup, often with a sandwich
Baked beans on toast

We don't often have eggs for breakfast so they are a quick option for lunch here

I hate lunch. So much.

I hate lunch too. We also homeschool but there are only three of us each day for lunch.

DIY pizzas - on pita/english muffins

Soup / grilled cheese/creamcheese sandwiches or toast
Leftovers

Burritos - I have a recipe for black bean burrito filling that had zucchini, cabbage and carrots. Delicious and the kids love it wrapped in a tortilla.
They also like tortillas just filled with refried beans and cheese.

We're in a rut...I need some new ideas!

I agree with the diy mini pizzas on pita, english muffins even tortillas can work out with very thin pizzas. I remember making these often as a child.

bean tacos(that is what I had yesterday).

salads. If possible involve them into making them, helping "toss" it. I find my dd is 10xs more likely to dig into the salad when she helps compared to when she doesn't help me mix it up. Can top with protein options too. I throw in sesame seeds for a calcium boost since I'm not a milk drinker. I may have a glass of almond milk a few days a week.

one thing I made sometimes when I did home daycare was a risotto of rice and spaghetti sauce(used jar kind since it was easy and quick) and shredded carrots into it. The little boy I watched for awhile never knew they were there.

Dd was getting stuck into taking pj and honey to school too. If they love pb you can maybe mix it up to grilled pb sandwiches or even put it in tortillas like quesadillas but pb with honey. DD loved this when I tried it out in July because we had ran out of bread.

It may help to add a cooking type curriculum to the homeschool plans. Make it part of learning so its fun. Look up recipes with the older one and see if any pop out they'd like to try making.
