i grew up making and eating pakistani food, which isn't very vegan friendly at all... if it doesn't have meat, it's got dairy. that said, indian, especially south indian is probably the most vegan friendly to make at home, so that's what i chose. if i'd grown up making mexican i might have said that. mex and indian are probably the two types of food i make most often though.
thai isn't too hard to make vegan, but so many of the dishes really rely on that sort of seafood/pork flavour that i find hard to reproduce at home... plus the ingredients tend to be very expensive in my area. whereas indian food relies on good quality spices to make it taste right, and everything else is pretty easy to switch up. i can make a perfectly authentic indian meal even if i haven't gone shopping in 10 days, which is reason enough to get good at making curry!
