I answered Indian but mexican would be a close second.

We don't do meat/dairy substitutes so it's all whole foods.

I chose Mexican, though I would have liked to choose Italian also. The thing is, I think this is just because I find Mexican and Italian to be the easiest to prepare, period, because it's what I am most used to cooking. I haven't really ever learned to make good Indian or Asian food, though I make a lot of Asian-inspired food. Plus Mexican and Italian food has easy ingredients to buy (at least here in southern Cali).

That being said, most of the food I make isn't really ethnic, it's just whatever veggies/ fruit I get in my CSA box, and then whatever I think would go well with it.

I just wanted to thank you for the recipe! It was absolutely delicious. I also wanted to recommend it to others. It smelled and tasted wonderful, it was filling and healthy, it made great leftovers, and I can't wait to make it again. I was really naughty and used white basmati to put it over and it was like a reastaurant. lol

Glad you liked it! I tend to do quinoa with it, because I find that rice takes longer to cook than the curry, where quinoa is timed just right.

i grew up making and eating pakistani food, which isn't very vegan friendly at all... if it doesn't have meat, it's got dairy. that said, indian, especially south indian is probably the most vegan friendly to make at home, so that's what i chose. if i'd grown up making mexican i might have said that. mex and indian are probably the two types of food i make most often though.

thai isn't too hard to make vegan, but so many of the dishes really rely on that sort of seafood/pork flavour that i find hard to reproduce at home... plus the ingredients tend to be very expensive in my area. whereas indian food relies on good quality spices to make it taste right, and everything else is pretty easy to switch up. i can make a perfectly authentic indian meal even if i haven't gone shopping in 10 days, which is reason enough to get good at making curry!

OK, I'm inspired, I've always considered Indian for the days when I have the time and energy to work on a good meal, but if most of you are saying it is your quick and easy cuisine I must be missing something and need to work on that.

I certainly prefer tofu when it is in a good chinese recipe, but one of my quick and easy last minute dishes that I consider american (albeit not traditional) is just tofu with bottled bar-b-q sauce poured over it and broiled.

For the person who mentioned tomato soup- to keep it traditional one would eat it with a grilled cheese sandwich, thus no longer vegan.

I second boogiemonster...mediterranian.
