healthier pancake recipes(Gluten free too)

I'm on the hunt for a good gluten free pancake recipe. Maybe spelt? not sure how this works. I'd like to get away from white all purpose flour. And interested in trying out gluten free. My grandmother(maternal) had major tummy problems in her life later diagnosed with Crohns which I take it runs along with celiac a lot of times. So I wonder because dd has a skin symptom that sometimes run with gluten intolerance and I'd like to try elimination. I haven't had her tested though.

I used to make them with white flour using a rough following of an Alton Brown recipe with very technical separation of eggs and all. They came out perfect always.

No recipes, but spelt is just another kind of wheat and contains gluten.

When I've done gf baking I've used rice, tapioca, garbanzo bean/chickpea, and Sorghum. There is a chart here http://www.bobsredmill.com/docs/pdf/...ive_Flours.pdf on ratio to mix alternative flours that might be helpful, but be careful because these are not all gf.

I have an excellent buckwheat (gluten free) pancake recipe fromm Kathy (here on site) that is egg and dairy free too. Let me know if you are interested and I will post it. My kids suffered from rashes terrible and dairy was the worst cause for them.

Please post it, Bluebird! I'm trying to go GF, too, and would love to make pancakes for the fam! (That, and I miss the buckwheat pancakes I used to get at Quantum Leap in NYC!)

I don't have a gluten free one, but here's out wholegrain one:

Pancakes

1 cup whole wheat pastry flour
½ cup oats
2 teaspoons baking powder
1 tablespoon flax seed meal
½ teaspoon salt
2 tablespoons hempseeds
1 1/4 cups soy, almond, rice, oat or hempmilk (I'm sure dairy would work fine if that's what you have)

a little coconut oil for the pan

Stir together dry ingredients and pour the 'milk' over it, mixing it thoroughly.

Cook on a hot, lightly oiled griddle.

My fave GF one was a mix of tapioca starch and cornmeal, and it used buttermilk. The pancakes were thin---the way I like them (I don't like them too thick and cakey). I'll see if I can scare up the recipe here...

Buckwheat Pancake/waffle recipe

2 c light buckwheat flour
4 tsp corn-free baking powder
2 Tbsp vinegar
pinch salt
1/2 tsp ginger
1/4 tsp cloves
2 Tbsp sweetener
1/4 c oil
1 1/2 c water
