Squash time squash time! :)

So today they had a bunch of squash at the Farmer's Market.

What are your favorite ways of preparing squash?

I love butternut squash soup. All I do is peel the squash and cut it into cubes. Then I roast it with a quartered yellow onion. Once the squash is done (but don't burn the onion! eek!) just puree it with a can of coconut milk (cream is nice if you are not allergic to dairy but coconut milk is great!) and cook it a bit more. It is so good!


I got some spaghetti squash and some acorn squash too.

Does anyone have any recommendations for cooking acorn squash?

Our whole family loves acorn squash in this recipe for Three Sisters Stew.

i love squash casserole- we make the boston market copycat. so so good. i also make sauteed squash all the time, i either use butter or coconut oil and just cook it down and salt it and it is so good and so simple. i really love squash.

***so this is for yellow and green squash, i didn't read slow enough the first time to notice the acorn part. so oops..

Spaghetti squash is soo good with just a simpel marinara sauce!! I haven't had it in a year or so at least now... I should totally buy one tommorrow!! Good thought!!!

I just got a Hubbard squash and DD picked out a Buttercup (? I think that's what it was. It looked like a small green and white pumpkin.) squash.

The Hubbard was roasted and made into puree to make these cupcakes. Soo yummy.

The Buttercup I just halved and cleaned out then put butter, a drizzle of maple syrup and a shake of cinnamon in the hollow before baking. Acorn squash is good this way too.

I'm going to have to try some of these recipes. They sound good.

In our house the big ones are

thai butternut squash soup
stuffed squash with brown rice onions, garlic, cranberries, hazelnuts and spices
spagetti squash coleslaw w miso, sesame oil and spices
stuffed into pasta

We cut up chunks of butternut or acorn squash, pumpkin, and apples, and bake with maple syrup, cinnamon and butter.

I get a pumpkin, cut off the top like your'e making a jack o lantern, scoop out the seends and then fill it with grated cheese and heavy cream, salt and pepper. Put lid back on then bake until tender. Yummmmmmmmmmmmmmmm

They have the assorted squash bins out here now too but no delicata =(

I would do bad, bad things for some delicata....
