Can I soak grains in coconut kefir?

I've been making coconut kefir, since dd seems sensitive to dairy in my breast milk. Can I make soaked pancakes, etc using the coconut kefir? I did soaked oatmeal with acv yesterday, and that came out well.

Hey!! I am also wondering about coconut kefir. I was doing my bread, oats and granola in ACV but (with the exception of my oatmeal) it always left a tangy aftertaste. Oh, and vinegar kills yeast so my bread didn't rise at all (duh, geez, can't believe that didn't occur to me!). Now I'm using a lemon juice/water mix.

Coconut milk kefir or coconut water kefir?
Not that I know either. I can't have citrus or dairy and have been using ACV for everything. I would love to try something tastier.

I mean coconut milk kefir. I guess maybe I'll just try...it's sour, so I don't really see why it wouldn't work, though I am certainly no expert!
