I make eggplant lasagne. Slice then saute the eggplant in a little oil, then layer twice with tomato sauce, lasagne noodles, then alfredo sauce. Cover the dish with aluminium foil, put in the oven and bake, and it's done. Very simple.
If I have time or inclination, I make the sauces, but if I"m in a hurry, I just use jars of good quality sauces, both tomato and alfredo or a white sauce of some sort. If you like cheese, you can put some on top before baking.
I have some eggplant growing right now - on a plant that dh bought that was labeled 'watermelon.' I kept telling him it wasn't growing like a watermelon, then a couple of weeks ago, we noticed eggplants on it. I shall be making and freezing eggplant lasagne myself in a couple of weeks.

We've been eating these every week since eggplant has been in season. We serve them w/sweet corn and slices of garden tomatoes. Yum! We bake them.

thanks! those croquettes look yummy! I just came up with one and tested it and it was tasty!
eggplant stuffed peppers-
i cubed up the eggplant and saut. them in a pan with onion and garlic and then added a couple good splashes of soysauce over everything and covered the pan to let it all cook together. I added some grated parm cheese aafter it had all cooked to my liking then just cut the tops off the peppers put them in a shallow bake pan with a bit of water, stuffed with the eggplant stuffing, covered w/ foil and baked at 425 for about 20 mins! super yummy!
